Turkey Bolognese Pasta Skillet

Our favorite state of mind is a cozy state of mind, and there’s no faster way to get ourselves there than with a rich, hearty bowl of pasta. This version is just the ticket: Tender penne pasta is simmered in a creamy tomato sauce that’s chock-full of flavorful ground turkey, aromatics, and Parmesan. The best part? It’s all prepared in one pan! Glass of red wine and roaring fire in the fireplace not included (though highly recommended).

Instructions

Step 1
Peel and finely chop garlic. Heat a drizzle of oil in a large pan over medium-high heat. Add turkey and season generously with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes.
Step 2
Add garlic, tomato paste, and half the Italian Seasoning(all for 4 servings) to pan. Cook, stirring constantly, until garlic is fragrant and tomato paste has darkened slightly, 1-2 minutes. (Add a pinch of chili flakes if you like things spicy!)
Step 3
Stir in 2½ cups water (4½ cups for 4 servings), chicken stock concentrate, and uncooked penne until combined. Season generously with salt and pepper. Bring to a boil, then reduce to a simmer and cover. Cook, stirring occasionally, until sauce has thickened and pasta is al dente, 9-11 minutes (if pasta seems dry, add a splash of water). (If your pan doesn’t have a lid, cover with a baking sheet!)
Step 4
Reduce heat to low. Stir in marinara, cream cheese, half the Parmesan, and 1 TBSP butter (2 TBSP for 4 servings) until combined. Season with salt and pepper to taste.
Step 5
Divide pasta between bowls. Sprinkle with remaining Parmesan and serve.
