Pad Thai Rice Bowls

The deliciousness of pad thai in an easier to eat rice bowl presentation. Of course if you just can’t let go of authenticity, prepare pad thai noodles or chow mein noodles in place of the rice.
Add some shrimp, chicken, tofu or scrambled egg if you like.

Ingredients
4 servings
2 cupsparboiled rice
or long grain
1carrot
matchstick cut
1 cupfrozen peas
2 cupsbean sprouts
1bell pepper
diced
1 cuppeanuts
2limes
4green onions
¼ cupcilantro
Sauce
Instructions
Step 1
Bring rice, 1/4 tsp of salt and 2 cups of water to a boil in a wide bottom pot, cover with a lid and reduce the heat to medium low for 18-20 minutes.
Step 2
While rice cooks prepare the sauce and vegetables.
Step 3
When the rice is cooked toss 4 cups with vegetables and sauce.
Step 4
Divide pad thai rice among serving bowls and top each with fresh cilantro, peanuts and a squeeze of fresh lime.
