Ingredients

2 teaspoonsolive oil
¾ cuponion
chopped
¾ cupcarrot
peeled and chopped
¾ cupcelery
chopped
1 teaspoongarlic
minced fresh
2 cupscannellini beans
cooked
½ teaspoonfresh sage
chopped
rosemary
oregano
2 teaspoonsgrated lemon peel
1 cupVegetable Stock
¾ teaspoonsalt
¼ teaspoonblack pepper
2 tablespoonsparmesan cheese
freshly grated
Instructions
Step 1
In a large sauté pan, sauté onions, carrots and celery in olive oil for 2 minutes. Add garlic, and sauté for 1 minute more.
Step 2
Lightly stir in beans, herbs, lemon peel, vegetable stock, salt and pepper. Let simmer until stock is reduced by half, about 10 to 15 minutes.
Step 3
Finish by stirring in Parmesan cheese
