Using the popular feta hack we are making a hearty rainbow vegetable medley. Use whatever vegetables you have because you really can’t go wrong.

Instructions

Step 1
Place your veggies in your dish with the feta in the middle. I like to color coordinate but you don’t have to. Add in some thyme, olive oil, salt and pepper. Roast at 400 for about 30 minutes.
