Step 1
Preheat oven to 190 degrees C, 170 C for fan. Butter and line a 2lb loaf tin
Step 2
Add butter, sugar and bananas to a large bowl and blend well (stick blender of balloon whisk work fine). If butter is hard, microwaving for 10 seconds first will help. Add and blend in the eggs as last step
Step 3
Scatter the flour on top of the wet mix, then sprinkle baking powder and salt (and lemon if using). Fold into the wet mix carefully - don't beat to death, but do knock out any lumps
Step 4
Transfer to prepared tin, then bake in the oven for one hour. Check it is done using the skewer or sharp knife method (slide into the bread then remove - if it is clean it is done)
