Turkey Meatballs
2 poundsground turkey
1 cupbread crumbs
⅔ cuponion
minced
½ cupfresh parsley
minced
2eggs
3cloves garlic
minced
2 teaspoonsworcestershire sauce
½ teaspoondried basil
½ teaspoondried oregano
salt
black pepper
¼ cupolive oil
Vodka Sauce
28 ozcanned tomatoes
1yellow onion
minced
4cloves garlic
minced
½ cupheavy cream
2 Tbsptomato paste
1 cupvodka
¼ cupolive oil
red pepper flakes
to taste
salt
to taste
black pepper
to taste
½ cupparmesan cheese

Instructions
To make the meat balls
Step 1
In a large bowl, combine ground turkey, bread crumbs, onion, parsley, eggs, garlic, Worcestershire sauce, basil, oregano, 1 teaspoon salt, and ½ teaspoon pepper.
Step 2
Using a strong spatula or your hands, mix well. Shape the mixture into 1-inch balls (you should have around 48 total).
To bake the meatballs
Step 3
Preheat oven to 400 degrees. Line a rimmed baking sheet with foil for easy cleanup. Coat a wire rack with nonstick spray and set on prepared baking sheet.
Step 4
Arrange meatballs on rack, brush with oil, and bake until browned with crispy edges, about 15 to 20 minutes (an internal thermometer should read 165 degrees for 15 seconds).
To make the sauce
Step 5
In a large deep pan, add 1/4 cup of olive oil to medium heat.
Step 6
Once oil starts bubbling, add 1 diced yellow onion.
Step 7
Once the diced onions become soft, add you four cloves of minced garlic, red pepper flakes, salt and pepper.
Step 8
Once the garlic is cooked and soft, Add the vodka and let it cook off.
Step 9
Then add you two tbsp of tomato paste. Let the paste darken (about 5 minutes).
Step 10
Once the paste has cooked down, add the 28 oz of tomatoes and lower the heat to allow them to simmer for 25 minutes.
Step 11
Add salt, pepper and red pepper flakes to taste while simmering.
Step 12
Once the sauce has reduced, add your 1/2 cup of heavy cream and stir.
Step 13
(Optional) add 1/2 cup of parmesan cheese and stir.
Cook the pasta
Step 14
Cook pasta as indicated on the packaging.
