Instructions

Step 1
Start off by removing all the shells off your shrimp and then removing the vein that runs through them. You might be able to get your butcher to do this for you.
Step 2
Fire up your smoker and set the temp to 275 degrees F. With hickory wood chunks.
Step 3
Add shrimp to a medium sized mixing bowl and add the seasoning: Kosher salt, black pepper, garlic powder, red pepper flakes and lemon juice ( you can even add Lemon zest). Hand toss until they are nicely coated.
Step 4
In a 12” cast iron skillet, layer the bottom with lemon slices. Now place the shrimp facing the same direction, form a circle and then work your way to the middle until it forms a spiral. Now add the freshly chopped basil, oregano and rosemary springs.
Step 5
Place it on the smoker. Smoke for 20 minutes and then add the white wine and butter.
Step 6
Let the shrimp smoke for an additional 20 minutes and then check the temperature.
Step 7
When the shrimp reaches an internal temperature of 165 degrees F. Remove from the smoker and squeeze fresh lemon juice over the shrimp. I even added some hot sauce.
Step 8
Serve and enjoy with family and friends!
