This creamy and totally delicious green pasta is a great way to get more veg on your plate in 15 mins flat. - INGREDIENTS: 10 g Woolworths Fresh Basil 1 garlic clove, crushed 1 x 400 g can Woolworths Cannellini beans, drained 3 T olive oil Sea salt and freshly ground black pepper, to season 100 g Woolworths baby spinach Juice of a lemon Parmesan, grated to serve COOKING INSTRUCTIONS: Add the basil, garlic, beans, olive oil, seasoning and ½ cup of water to a blender and blend until smooth. Add the spinach and lemon juice to taste and blend again until sauce is vibrant green and smooth. Cook the pasta and reserve 2 cups pasta water. Add the sauce to the hot pasta with the pasta water and toss – this will help the sauce to coat the pasta and not become thick. Add a handful or two of grated parmesan if you like and even a little green chilli. Serve hot.

Instructions

Step 1
Add the basil, garlic, beans, olive oil, seasoning and ½ cup of water to a blender and blend until smooth.

Add the spinach and lemon juice to taste and blend again until sauce is vibrant green and smooth.
