Instructions
Step 1
put the flour in the bowl of a stand mixer fitted with a dough hook
Step 2
add the yeast to one side of the flour and the salt to the other side, then mix everything together

make a well in the middle of the flour
Step 4
add 2 tbsp of olive oil and 350ml of warm water, mixing until you have a slightly sticky dough

add the remaining 50ml of the water if needed to bring the dough together
Step 6
mix on a medium speed for 6 to 8 minutes, until you have a soft, smooth dough

lightly grease a large bowl

put the dough into the bowl, cover with a clean tea towel and leave to prove in a warm place for 1 hour, until doubled in size

grease a shallow rectangular tin
Step 10
dust your countertop with a little flour, then knock back the dough and tip it onto the countertop, streching it to fit the tin

transfer to the tin, cover with the tea towel and leave to prove again for 45 minutes, until risen
Step 12
preheat oven to 200oC

press your fingers into the dough to make dimples, leaving about 2.5 cm between indentations

brush the top with olive oil and sprinkle over the flaky sea salt

push springs of rosemary into the dimples in the dough
Step 16
bake in the preheated oven for 20 minutes

when the bread comes out of the oven, drizzle over another 2 tbsp of olive oil
