Instructions
Step 1
Combine the rum, fruit & beer. Cover, and refrigerate for 3-4 hours (the longer the better)
Step 2
Preheat the oven to 170°C. Lightly grease a cake tin.
Step 3
Transfer the rum, beer & fruit to a blender abd blend to a smooth pulp
Step 4
Blend the butter and sugar together thoroughly with an electric mixer.
Step 5
Add mashed banana, vanilla, nutmeg, allspice, maple syrup, baking powder & mix.
Step 6
Add flour & puréed fruit, mix until completely combined.
Step 7
Pour the mixture into a baking tin, and bake at 170 for 50-60 mins until an inserted skewer comes out clean. Leave to cool before serving.
