Step 1
Mix the garlic, lemon juice and yogurt in a bowl. Finely chop (or coarsely grate) the cucumbers, put in a colander and add the salt; leave for 10 minutes.
Step 2
Combine the yogurt mixture, cucumbers, chives and most of the mint. Serve in a bowl, scattering over the remaining mint.
