Spiced Salmon with Tomato and Feta Couscous

Instructions

Step 1
Add couscous to a heat proof bowl. Pour boiling water over couscous, cover and stand for ten minutes. Fluff couscous with a fork and set aside
Step 2
Sprinkle each salmon fillet with sumac and season with salt and pepper
Step 3
Heat olive oil in pan over medium-high heat. Add salmon fillet and cook for two-three minutes each side or until cooked to your liking. Set aside
Step 4
Combine couscous, tomato, parsley, arugula and feta in a bowl. Pour lemon juice over couscous and stir to combine
Step 5
Split couscous between two bowls and top with a salmon fillet
Step 6
Serve one now and refrigerate one for tomorrow
