Ingredients
3 servings
1 lbboneless skinless chicken thighs
or breasts, pound out pieces so they are all equally thin
0.5juice of lemon
1 Tbsporegano
1 Tbspolive oil
or avocado
1 tspgarlic powder
½ tspsalt
½ tspblack pepper
red pepper flakes
Optional, for spice
0.5red onion
thinly sliced
1tomato
large, diced
1cucumber
medium, diced
2 Tbspred wine vinegar
1 Tbspdried parsley
¼ Tbspblack pepper
hummus
tzatziki
feta
shredded lettuce
Tortillas
or pitas
Instructions
Step 1
1. In a medium bowl, combine all of the ingredients listed under veggie mixture. Toss well and set aside to let the flavors marinade.
Step 2
2. Generously season chicken on both sides with oregano, parsley, garlic powder, salt, pepper, and lemon juice.
Step 3
3. Heat 1 tbsp oil in a large pan over medium high heat (I used a grill pan). Sear chicken on each side for 2 minutes then turn heat down to medium and continue to cook for about 3 more minutes on each side. Set aside to rest.

4. Slice chicken.

5. Lay down tortillas and assemble with tzatziki or hummus, chicken, veggies, and feta.
