This is a great snack or side dish idea that incorporates corn and potato! I think it will be popular among children too 🤫 This recipe makes about 10 medium sized fritters.

Instructions

Step 1
Cut potatoes up. The shape or size does not matter as we will be mashing it. Cutting it up allows it to cook faster.
Step 2
Bring a pot of water to boil.
Step 3
Add salt generously.
Step 4
Add potatoes and cook until tender.
Step 5
Transfer potatoes to bowl.
Step 6
Add corn, cilantro, onions, spring onions, shredded cheese, flour, red chilli pepper flakes and salt.
Step 7
Mix well and form patties.
Step 8
Fry patties until golden brown.
Step 9
Prepare chilli mayo sauce (by mixing chilli sauce and Japanese mayonnaise).
Step 10
Serve!
