Instructions

Step 1
In a large bowl or stand mixer, add your sugar and zest 2 lemons. Massage the zest into the sugar until yellow and fluffy.
Step 2
Next cream butter and sugar until light and fluffy (approximately 5 minutes)
Step 3
Add eggs and mix again until combined.
Step 4
Add the remaining wet ingredients including milk, sour cream, vegetable oil and lemon juice. Whisk until combined
Step 5
Then add your dry ingredients (soft in) and fold in gently with a spatula. Take care not to overmix.
Step 6
Preheat your oven to 170C and line your loaf tin. Pour the batter into the pan. If you’d like to get the signature central crack on top of your loaf, pipe some softened butter in a straight line across the centre (entirely optional)
Step 7
Bake for 40-45 minutes until golden and a toothpick comes out clean.
Step 8
For the syrup, in a saucepan or microwave mix lemon juice and icing sugar until the sugar is dissolved.
Step 9
Poke holes into the cake with a toothpick and pour the syrup over your hot cake. Let the cake cool completely.
Step 10
Meanwhile, in a separate bowl mix together icing sugar, milk and lemon juice. Pour over the cooled cake and top with lemon slices if you like.
Step 11
Let the cake set completely for in the fridge for 3 hours/overnight if you’re patient! Enjoy :)
