Instructions
Step 1
Preheat oven to 180°C Fan / 200°C / Gas 6 / 392 Fahrenheit
Step 2
Tip the onion, peppers, garlic, chicken thighs, chorizo and olive oil into a roasting tin.
Step 3
Roast for 25 minutes
Step 4
Meanwhile put saffron into a mug with a couple of tbsp boiling water and set aside
Step 5
After 25 mins remove tin from oven and stir through the rice, stock, saffron and saffron water.
Step 6
Cover tightly with foil or lid (important!) And return to oven
Step 7
Turn oven down to 160° C Fan / 180° C / Gas 4 / 320 Fahrenheit
Step 8
Cook for 1 hour or until rice cooked through
Step 9
Once cooked add a dash of stock or boiling water to adjust texture, squeeze over lemon juice, taste and adjust seasoning as necessary
Step 10
Serve hot, scattered with the herbs and lemon wedges along side
