Instructions
For the Salmon
Step 1
Season the skin with oil and salt & pepper (squeeze of lemon if you fancy).
Step 2
Fry skin side down for around four-five minutes, before flipping for another three or so.
For the asparagus
Step 3
Salt and season well with lemon.
Step 4
Whack them in the oven for twelve minutes on 180c.
For the sauce
Step 5
Muddle a pack of raspberries with a wooden spoon through a sieve so you are just left with the juice in your pan.
Step 6
Place on a low heat and add a sprinkling of paprika, dash of balsamic and squeeze of honey.
Step 7
Season to taste. More heat/smoke? Add paprika. More sweetness? Add honey. More sharpness? Add balsamic.
Step 8
Simmer for about five minutes.
To serve
Step 9
Put the sauce in the middle of the plate and splash about with the underside of a spoon. Place asparagus on top, then the salmon. Add blueberries for colour, texture and sweetness to balance sharpness in the sauce.
