2serrano peppers

1 ½ Tbsgarlic

1red bell pepper

1 bunchbroccolini

1 tspblack pepper

½ Tbsginger

1 tspsalt

2sticks celery

½ cupvegetable stock

1 containervegan feta

1 cupspinach

¼ cupfresh parsley

¼ cupcilantro

0.5lime

1 tsprosemary

1 tsporegano

¼ cupgreen onions

2 Tbsvegan heavy cream

0.5 containermushrooms

1 boxrigatoni

0.5water

Instructions
Step 1
Chop everything and place all seasonings in a bowl
Step 2
Boil water for the pasta
Step 3
In a different pan, heat the olive oil
Step 4
Add the vegetables and fry them








Step 5
Add seasonings and water as needed



Step 6
Add feta and stock when vegetables start to tender

Step 7
Pour mixture into blender and add herbs, plus spinach

Pour mixture in pan on low heat
Step 9
Add noodles, mushrooms and green onions. plus liquids




Step 10
Cook on low heat for 5-7 minutes.

Garnish with fresh cilantro
