Instructions
Step 1
Melt the butter in a saucepan over medium heat. Add the milk and 120ml water and bring to a rapid simmer.
Step 2
Add the flour, sugar and a pinch of salt and mix continously with a wooden spoon until the dough comes away from the sides of the pan.
Step 3
Transfer the dough to a mixing bowl and leave to cool for 10 minutes.
Step 4
Add 1 egg to the cooked dough mixture and bear with a wooden spoon until combined. Repeat with the remaining eggs, ensuring each egg is fully incorporated before adding the next.
Step 5
Place the sugar and ground cinnamon in a deep roasting tin with a very generous pinch of salt and toss to combine.
Step 6
Fill a large deep saucepan one-third full with vegetable oil and heat to 180℃
Step 7
Meanwhile, transfer the dough to a piping bag fitted with a 2cm star nozzle.
Step 8
Pipe 4 to 5 dough strips directly into oil, using scissors to cut the dough at the tip to release into the oil.
Step 9
Fry, turning once, until golden brown and crisp on all sides then transfer to a kitchen towel-lined baking tray. Repeat with the remaining batter.
Step 10
While the churros are still hot, toss them in the cinnamon sugar.
Step 11
Chop up the dark chocolate and place it in a bowl with the golden syrup.
Step 12
Heat the double cream over medium heat until just simmering then pour it over the chocolate mixture and stir until you have a smooth, glossy sauce.
