Instructions

Step 1
Preheat oven to 350. In a microwave safe bowl, add butter and cook until melted

In a separate bowl, combine flour, baking powder, and baking soda and set aside.
Step 3
Add melted butter to a standing mixer, and add sugars, beaten eggs, and vanilla.
Step 4
Beat mixture on low speed until smooth.
Step 5
Slowly add flour mixture, until fully combined. The mixture will be sticky; you may need to use a spatula to get the dough off the paddle.
Step 6
Once fully mixed, add the oats & cornflakes. Beat on low speed for :30 seconds.
Step 7
Add in chocolate chips last, and briefly beat (or wait to add chips until you are adding your batter to the baking sheet.)
Step 8
Grease your hands lightly with oil, and roll the dough into small balls (about 1 tbsp per cookie).
Step 9
Add the rolled dough to the ungreased baking sheet.
Step 10
Bake in the oven for 10-12 minutes, depending on your desired done-ness and your oven temperature.
