Gnocchi with Pork

This hearty dish came together as a result of wanting to use up zucchini. Its since become a staple in our menu planning. I normally use Italian Sausage, but ground pork and a few dashes of Italian Seasoning works too.

Instructions
Step 1
Brown meat in skillet over medium heat, while meat is browning, chop the veggies
Step 2
Once pork is browned, saute onion and minced garlic til translucent
Step 3
Add sliced mushrooms to skillet
Step 4
While mushrooms are cooking, boil water to prepare the gnocchi
Step 5
When you add the gnocchi to the pot, it is time to add the zucchini and squash to the meat mixture.
Step 6
Drain gnocchi and add it to meat mixture
Step 7
Stir in pesto and cover - let simmer for 15 minutes
Step 8
Toss in Chopped Spinach 5 minutes before you serve.
Step 9
Stir it up and serve
