Instructions

Step 1
1. Chopping the mushrooms into quarters and place into a large frying pan with the drizzle of olive oil and a pinch of salt and pepper. Fry for 5 to 6 minutes until soft and golden.

2. Place the linguine onto boil in a large saucepan for 10 to 12 minutes on a medium heat, until cooked through.
Step 3
3. To make the sauce, add the whole garlic cloves peeled to the blender with the cashew nuts, nutritional yeast, oat cream, tamari soy, the juice of half the lemon and a pinch of salt and pepper. Blitz until you have a smooth creamy consistency. Pour the blended sauce into the frying pan with the mushrooms, once cooked. Reduced to a low simmer into ready to serve.
Step 4
4. Drain the linguine then mix it with the hot cashew sauce, the mushrooms and 2/3 of the rocket. Use tongs to twist the saucy linguine into serving bowls, top with the remaining rocket and a wedge of lemon.
