Instructions
Step 1
1. Bring large pot of water to a boil. Add gnocchi and cook according to package instructions. Save 1/4 cup of cooking water.
Step 2
2. Preheat saute pan over medium-high heat. Add chorizo and saute about 8 minutes until cooked through (safe Internal temperature 160f). Set aside on paper towel on plate.
Step 3
3. In same saute pan, add oil and mushrooms cooking for 5 minutes. Or until browned. Add onion and bell pepper cook five minutes more. Add spinach or kale cover with lid and cook 2-3 minutes more stirring occasionally. Add chorizo, gnocchi and about 2 tbsp reserved cooking water, stir to coat everything.
