CREAMY HIGH-PROTEIN SPINACH PASTA

WHY? nutritional yeast, and the combination of tofu + hemp seeds, which provide all the 9 essential amino acids aka a complete protein.
INGREDIENTS
200g Pasta of your choice (P 28gr)
150g Silken tofu (P 11gr)
260gr Fresh baby spinach (P 8.4gr)
3-4 basil leaves
3-4 tbsp Nutritional yeast (P 10gr)
2 tbsp hemp seeds (P 4gr)
Oil, salt, pepper, and chilli flakes to taste
2 cloves of minced garlic
1 small white onion
METHOD
Boil the pasta according to the package instructions. Before draining, reserve a small amount of cooking water and set it aside.
In a non-stick pan, add a generous glug of oil. Add the minced garlic and chilli flakes and finely chopped onion, cooking for a couple of minutes. Add the fresh spinach and stir until fully wilted. Remove from heat and set aside.
In a blender, combine the wilted spinach, silken tofu, basil, hemp seeds, nutritional yeast, a pinch of salt, pepper, and the reserved pasta water. Blend until smooth.
Place the blended sauce back into the pan where you cooked the spinach, add the boiled pasta, and stir until well combined. If you see that the pasta sauce is still too creamy for your taste just add a splash of water until you get to the desired texture.
Serve the pasta topping it with additional hemp seeds and vegan Parmesan cheese.
