Instructions

Step 1
1. Preheat the grill, grill pan or barbecue.

2. Mix 2 tablespoons of olive oil with Mediterranean herb mix in a small bowl. Brush the sourdough slices with the mixture.

3. Grill the bread slices for a few minutes on each side, until they are toasted and golden brown.

4. In a separate bowl, mix 1 teaspoon of olive oil, balsamic vinegar, salt, and pepper. Trim off the woody ends of the asparagus and add the tender part to the mixture. Toss until the asparagus is coated evenly.

5. Grill the asparagus to your liking, until they are cooked through but still slightly crunchy.

6. To assemble the toast, spread 1 teaspoon of sun-dried tomato pesto on each slice of bread. Add the buffalo mozzarella on top, and then the grilled asparagus.
