Cyprus Lemon Potatoes

Cyprus potatoes are delicious. You can spot them immediately as they proudly wear their little suits of red soil from the rich earth they grew in. They are waxy with a slight chewiness to them and when roasted they take on a wonderfully creamy flavour.

Step 1
Preheat the oven to 180°C. Peel the potatoes and then cut into quarters lengthwise. Place them in the roasting pan (23x30cm), followed by the garlic.

Now pour in the olive oil, wine and 125 ml of water. Halve the lemon and squeeze in the juice, then throw the leftover lemon into the pan as well. Finally, add a couple of pinches of oregano and season generously with salt and pepper.
Step 3
Place the potatoes into the oven for about an hour, or just over, depending how crispy you want them. Turn the potatoes once halfway through cooking to help brown the different sides. You want to make sure when you add the potatoes to the roasting pan that the liquid is only about halfway up the potatoes; they are meant to be roasted, not boiled.
Step 4
Once cooked, give them another sprinkle of salt and serve.
