Cauliflower Rice Chicken Biryani

This dish is mouthwatering good & has all the flavors you love about a good biryani. Please don't be intimidated by the list of ingredients! They are mostly dry & whole spices & this dish takes just 15 min to prep. I hope you love this one as much as I do!

Instructions

Step 1
Marinate your chicken for 1 to 24 hours. The longer the better.
Step 2
Add 1 tbsp of ghee to a heavy bottom pot. Once hot, add your cashews & brown them. Remove & set aside.

3. Add an additional tbsp of ghee. Add the whole spices & allow them to become fragrant, ~20 sec.

4. Next, add sliced onion. Take the time to really brown the onions well. This should take 10-15 minutes.
Step 5
5. Once the onions are well browned, you can remove half of them if desired to save for garnishing.
Step 6
6. Add the marinated chicken along with the green chili. Give everything a good mix & cook covered for 8-10 minutes.
Step 7
7. Add riced cauliflower & gently mix everything together. Cook on low heat for 10 min. If you find your biryani watery, you may need to cook a while longer.
Step 8
8. Add your saffron bloomed in milk & top with reserved caramelized onions.
Step 9
9. Garnish with herbs, cashews, & pomegranate.
