Step 1
Cut the cutlet in cubes, make them big as much as you like. For this recipe they have been made around 3cm large.

The second step is to cut the sausage in pieces as large as we cut the cutlet.

In a container you can now place the cutlet and the sausage with the wine. Add salt, pepper, sage, rosemary and garlic at your own taste. Mix the meat and the spices with your hands, cover the container and put it in the fridge for at least 30 minutes.

Prepare the vegetables.
Step 4
Wash your vegetables. For this recipe it has been chosen to use red, yellow and green peppers, zucchini and eggplant. Cut these vegetables in cubes, possibly the same size of the meat.

Warm up the grill
Step 5
In this step we are going to pre-cook the ingredients, because of the fact each of them has a different cooking time. If you put all of them in a skewer raw and then straight on the grill you can end up having some of the well-done and some raw and this is not the result we want.

Before to make the skewers, it might be a good idea to pre-cook the ingredients. This is because all the ingredients have a different cooking time. Placing the raw meat and vegetables on the skewers and than straight on the grill can make some of them over cooked or other raw and this is not what we want.
For this reason, is better to grill the vegetables and the meat for few minutes each side until they start browning and then put them aside for few minutes until everything is ready. They do not need to be well cooked (if it is the way you like it), we are going to grill them for few more minutes later.
So, as said before, as soon as the meat and vegetables start browning, remove them from the grill and keep aside until everything is ready,

Put the meat and the vegetables on the skewers alternating one another.

Step 8
Grill now your meat and vegetables skewers for another couple of minutes per side. You can brush them with the red wine marinade left while grilling to make them even more tasty.
