Instructions

Step 1
1. Preheat oven to 165 degrees Celsius (325 degrees Fahrenheit). Grease baking tray or line with baking paper (baking paper works best)

2. Sift flour, cocoa, baking soda and salt, (this is optional, I rarely sift and it turns out just the same).

3. In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Beat in the vanilla extract, egg and egg yolk until light, fluffy and creamy.

4. Mix in the sifted ingredients until just blended, (don't over stir). Stir in the chocolate chips by hand.

6. Drop cookie dough 1/4 cup at a time onto prepared baking tray. (Not to sound like a Pinterest mum but somewhat circular messy clumps rather than rolled balls gives the authentic cookie look if you're into that sort of thing).
Step 6
7. Bake for 15-17 minutes or until the edges are slightly toasted. Do not go over 17 minutes! Since these have cocoa in them it's hard to see if they're toasted around the edges, but 15-17 minutes is perfect. Cool on baking tray for a few minutes and allow the cookies to harden slightly before moving them.
