Step 1
Clean the whole chicken thoroughly, transfer to a big sauce pot. Add in sliced ginger, whole shiitake mushroom, cooking wine, goji berries and Chinese dates, scallion. Pour in water (close to 3.5 liters).
Step 2
Bring water to boil, remove blood/residue from the boil, continue simmering the broth for 2.5 hours on medium low heat until chicken is absolutely soft and broth gets savory.
Step 3
Season with salt to taste, garnish with chopped scallion. Serve in a small bowl.
