Step 1
Set the oven at 200°C/Gas 6. Place the peppers in a roasting tin. Cut the spring onions in half lengthways and tuck them amongst the peppers, together with the garlic cloves and thyme sprigs. Trickle over the olive oil and toss everything together.
Step 2
Bake for thirty minutes, then tip in the orzo and stock and continue cooking for twenty minutes or until the pasta is al dente. Remove from the oven and fold in the extra thyme leaves. Check the seasoning and spoon onto plates.
Step 3
• If the stock has not been absorbed by the pasta, place the tin over a moderate heat for a few minutes and let it reduce.
