Instructions
Step 1
In a bowl of a stand mixer combine flour, yeast, sugar and salt. Using the paddle attachment mix well for 1 minute. Then change the attachment to the dough hook, add milk and start mixing on a low speed for 8 minutes. Add olive oil and mix for another 2 minutes.
Step 2
When the dough is ready, form a ball, grease the mixer bowl with a bit of olive oil and place the dough in the mixer bowl. Cover with a kitchen towel and let it rise in a warm place for 1-1.5 hours.
Step 3
When the dough has risen, transfer it to the lightly floured surface, knead slightly, and divide into 2 equal parts.
Step 4
Working with the one part at a time, roll out the dough into a rectangle shape (about 30cm*20cm and 5mm thickness).
Step 5
Spread the half of pesto all over the dough, and sprinkle half of the tomatoes and half of the cheese on half of the rectangle. Then, fold over half of the dough and secure the edges.
Step 6
Cut the dough into 1-inch wide strips, then, holding each end, twist each one twice before placing it onto a lined baking tray.
Step 7
Brush with egg wash and sprinkle with sesame seeds.
Step 8
Repeat with the rest of the pastry and filling.
Step 9
Bake in preheated oven at 180C for 15-20 minutes or until risen and golden.
