Step 1
Into a pot, add olive oil and sear/cook two seasoned chicken breasts on both sides. Then, remove the chicken and set aside. Alternatively, you can buy an already cooked chicken from the groceries store. On the oil, take a longaniza, chop it up into cubes, and cook. When done, also set aside. Then, add your white onion and cook it until caramalized. When your onion is caramalized, add in your garlic, carrots and celery and cook until done. Once done, add the chicken broth and any additional chicken soup packets as wanted. Once there, add cubed potatoes and let them cook. On another pot, cook your shell pasta, drain, and set aside. Go over to your chicken and shred it. Once the potatoes are cooked, add in your shredded chicken, longaniza, and pasta and allow to cook. Then, add cilantro and spring onions. Take it off the heat and serve with lime.
