Ingredients
4 servings
2 lbsboneless skinless chicken thigh
or breast, cut into 1-inch cubes
1 Tbspjerk seasoning
wet
8baby bella mushrooms
small, marinate with a drizzle of oil and
olive
salt
pepper
8cherry tomatoes
or grape
1red onion
medium, cut into 10 wedges
1 Tbspall-purpose seasoning
old bay adobo
¼ cupolive oil
salt
to taste
pepper
to taste
Instructions
Step 1
1. Preheat Oven to 350-375 degrees
Step 2
2. In a bowl mix the jerk seasoning, all purpose and olive oil
Step 3
3. Clean and add vegetables to a bowl
Step 4
4. Dice the chicken and add it to a separate bowl
Step 5
5. Drizzle half the seasoning on the chicken and vegetables and mix well
Step 6
6. Soak Skewers in water if using on a grill to prevent burning
Step 7
7. Cover dish or seal bag; refrigerate about an 1 hour to marinate.
Step 8
8. Heat gas or charcoal grill. Drain chicken; discard marinade.
Step 9
9. On each skewer, thread chicken, mushrooms, tomatoes and onion alternately, leaving space between each piece.
Step 10
10. Grill the kebobs until the marks on the chicken and vegetables
Step 11
11. Place kabobs on cookie sheet or on a rack and let it cook for about 20 minutes or until chicken is no longer pink in center and vegetables are tender.
Step 12
12. Then cover loosely with foil for five more minutes
