Step 1
Start the rice and wash lettuce cups
Step 2
Peel ginger and cut into thin strips. Dice the garlic
Step 3
Finely dice the shallot and put in a bowl. Zest one lime and juice both limes in the same bowl. Add soy sauce, sriracha and fish sauce. Stir to combine.
Step 4
Heat large skillet over high for 2 minutes. Add oil to coat the bottom. Add ground beef, season with salt and immediately smush the ground beef down into the pan to flatten it and break into pieces. Cook 5 minutes or until brown
Step 5
Add ginger and garlic as the beef begins to crisp, 2 minutes. Add the lime mixture and cook, stirring until the sauce reduces, about 3 minutes.
Step 6
Turn off the heat and sprinkle on the cilantro (or green onion). Serve with rice or lettuce cups
