Aroz is a Goan pilaf, in which beautiful long grains of rice receive their yellow hue from turmeric and are cooked in a broth, flavoured subtly with few spices. It tastes great on its own, but can be coupled with curries like the vindaloo, sorpatel, etc or sides like stews, steaks, meat chops, or the all-time-favorite Goan chorisos.

Ingredients
5 servings

1 cupBasmati rice
washed and soaked for 30 minutes

2onions
large, sliced

2 cupswater
hot

2 tablespoonsoil

2 tablespoonsghee
clarified butter

cinnamon stick
2-inch

6cloves

8black peppercorns

4maggi cubes
eg, non-veg as per choice

Salt
as required

1bay leaf

3cardamom pods

3curry leaves

1potato
grated

2carrots
grated

French beans
finely chopped
Instructions
Step 1
Wash the rice thoroughly
Step 2
Soak it for 20 minutes
Step 3
In a pan add oil and ghee fry onions, cardamom pods, cinnamon stick, pepper, cloves and sauté until translucent
Step 4
Remember not to burn the onions only sauté until soft
Step 5
Add bouillon cube and also bay leaf and fry add all the veg and cook
Step 6
Add 2 cups water to the mixture
Step 7
Add 2 cups rice and cook on low flame
Step 8
Add salt to taste,
Step 9
Cook until the rice is cooked and the water is absorbed
