Instructions
Step 1
Add rice to bowl of water and wash thoroughly. Refresh water until runs clear. Drain thoroughly.
Step 2
Bring saucepan to boil and add bay leaf, cassia bark, cumin seeds, clove, turmeric, cardamom pods and salt.
Step 3
Stir contents and then add rice. Boil for 1-2 mins less than instructions, should be firm but not raw.
Step 4
Drain thoroughly and leave to sit on stove for 15-20 mins, fluff through with fork. Leave to cool and then let sit in fridge overnight or freeze and thaw before proceeding with next steps.
Step 5
Add approx 1 tsp butter ghee & coconut oil to pan on medium heat and add onions to soften.
Step 6
Add methi leaves and mix powder, cook for approx 20s making sure not to burn.
Step 7
Add rice, stir through. Serve and garnish with chilli and coriander.
