Instructions

Step 1
Preheat a large skillet or griddle over medium heat.

In a bowl, combine the chicken, cheddar cheese, Monterey Jack cheese, onion, bell pepper, cilantro, taco seasoning, salt, and pepper.

Spread a thin layer of the chicken mixture on half of each tortilla.

Fold the tortillas in half and press down gently.

Heat a small amount of vegetable oil in the skillet or griddle.

Add the quesadillas to the skillet or griddle and cook for 2-3 minutes per side or until golden brown and crispy.

Cut the quesadillas into wedges and serve immediately.

If you don't have taco seasoning, you can make your own by combining 1 tablespoon chili powder, 1 teaspoon cumin, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon paprika, and ¼ teaspoon salt.

To make sure the quesadillas are cooked through, cut one in half and check to make sure the chicken is heated through.
