Preheat a large skillet or griddle over medium heat.

In a bowl, combine the chicken, cheddar cheese, Monterey Jack cheese, onion, bell pepper, cilantro, taco seasoning, salt, and pepper.

Spread a thin layer of the chicken mixture on half of each tortilla.

Fold the tortillas in half and press down gently.

Heat a small amount of vegetable oil in the skillet or griddle.
