Ingredients
6 servings
8 ozfettuccine
uncooked
2 tablespoonsextra virgin olive oil
1 cuponion
large, chopped
2red bell peppers
medium, or green, thinly sliced
3cloves garlic
finely chopped
1 x 14 ozsmoked sausage
cut into 1/2-inch slices
1 x 28 ozfire-roasted crushed tomatoes
can, undrained
1 tablespooncajun seasoning
½ cupwhipping cream
½ cupshredded parmesan cheese
parsley
chopped, fresh, if desired
Instructions
Step 1
Cook and drain fettuccine as directed on package.
Step 2
Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat.
Step 3
Cook onion, bell peppers and garlic in oil 3 to 4 minutes, stirring frequently, until crisp-tender.
Step 4
Add sausage; cook 3 to 4 minutes, stirring frequently, until vegetables are tender.
Step 5
Add tomatoes and Cajun seasoning.
Step 6
Stir in whipping cream.
Step 7
Cook uncovered 5 to 8 minutes, stirring occasionally, until mixture has thickened.
Step 8
In large serving bowl, toss sausage mixture and cooked fettuccine.
Step 9
Sprinkle with cheese and parsley.
