This is taco stuffed bell peppers, half a bell pepper is 1 serving. It contains about 3.2 ounces of taco meat and you add Mexican cheese, guacamole and sour cream and drizzle homemade hot sauce on top of it.

Step 1
First start a pot to boil water. While the water is boiling start your ground beef in a skillet. Cut your bell peppers in half and clean the seeds out, set aside. Once the water is done boiling, Turn water off, add the 4 halves of peppers to the hot water, add a lid. Let those sit for five minutes. Return to the ground beef, drain and rinse the beef off ad back to your pan. Then add the 2 season packs. Stir in your 1 1/2 cups of water. Stir until the water is gone. You can buy or make your own guacamole. If you make it scoop out the insides of the avocado into a bowl, mash it with a fork or masher add about a slice to a slice and a half of onion, a small tomato, I use about a half of a Serano pepper pour in a little bit of lime or lemon juice. Whichever one you prefer add some salt and pepper to taste.

If you choose to make homemade salsa, you will need tomatoes, onion, cilantro, whatever type of peppers you like to put in your salsa, I prefer Serranos. Mix them all together add lemon juice and salt and pepper to taste. I add all of this to a food processor until it’s mixed. It’s normally about five good size tomatoes, one onion, two Serano peppers, a bunch of cilantro, some lemon juice and then salt and pepper to taste

Now once you pull the peppers out of the water, put them on a baking sheet. Add some Mexican cheese inside the pepper, then put about 3.2 ounces of taco meat in it. Then add more cheese to the top and then bake at 400 for about 9 to 10 minutes until the cheese is golden brown. When you remove it from the baking dish, add guacamole on top, however, much sour cream you like and then drizzle your homemade salsa on top of it and then serve.
