VARIATIONS: Spiced pancakes- add one of the following spices: 1 teaspoon cinnamon or ginger, 1/2 teaspoon nutmeg, 1/8 teaspoon cloves, or 1 1/2 teaspoons pumpkin pie spice. Or you can add fresh grated ginger; combine with other liquids in blender first.
SWEET PANCAKES: Add 1 to 2 teaspoons of maple syrup with liquids.

1 teaspoonbaking soda
1 teaspooncream of tartar
½ teaspoonsalt
1 cupalmond milk
or water
2 tablespoonsoil
Instructions
Step 1
Preheat large nonstick skillet on medium heat
Step 2
In a large bowl, whisk flour, baking soda, cream of tartar, and salt.
Step 3
Make a well in the flour and pour in milk and oil. Whisk just until the ingredients are combined.
Step 4
Drop by spoonfuls onto skillet. Cook until the tops are bubbly and edges are brown. Turn and cook until lightly brown. Serve at once.
