Step 1
In a large non-stick skillet over medium-high heat, cook the chourico for 5 minutes or until slightly browned.
Step 2
Add olive oil, onion, garlic and chile pepper. Continue cooking for another 3 to 4 minutes, or until onion is soft and translucent.
Step 3
Add red wine to the pan, and deglaze, scraping up any browned bits from the bottom of the pan.
Step 4
Stir in peas, paprika, bay leaves and salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer uncovered, stirring occasionally, for 10 minutes or until peas are almost cooked through and sauce has slightly thickened.
Step 5
Using a large spoon, create four hollows in the pea mixture, and carefully break an egg into each hollow.
Step 6
Cover skillet and simmer until the eggs are cooked as desired (7 minutes should be enough for a soft, runny yolk; 10 minutes for a hard, crumbly yolk).
Step 7
Garnish with a little fresh parsley when serving.
