Chicken and chorizo paella

Instructions

Step 1
Heat oil in large pan (I don’t have a Paella pan so I used my skillet)
Step 2
Seal the chicken, remove and put aside
Step 3
Add onion and garlic to pan and fry until soft
Step 4
Add paella rice, paprika, saffron, salt and pepper, stir until evenly covered before adding the chicken stock
Step 5
Reduce heat and simmer for around 10 mins
Step 6
Add chicken back into the pan along with peppers and green beans/peas and chopped tomatoes
Step 7
Stir and simmer for further 10-15 mins. Until the rice has cooked. Add more stock if needed
Step 8
5mins before the end, fry the chorizo in a pan.
Step 9
Serve the paella with the chorizo (and some of its oil) on top
