🇪🇸 Chicken with Chorizo & Bell Peppers

Instructions

Step 1
Heat lg. pan over med. Add chorizo to pan, cooking (1-2 min. per side) until it crisps & some of its oil has been released. Set aside, leaving oil in pan.
Step 2
Pat chicken dry with paper towels; season on all sides with salt & pepper. Heat same pan over med. (If pan seems dry, add a drizzle of oil.) Add chicken & sear (5-6 min. per side) until browned & cooked through. Remove from pan & set aside.
Step 3
Add onion, garlic, bell peppers, & drizzle of oil to same pan over med. Stir (3-4 min.) until just softened. Add rice & stir to coat. Stir in 1C water, a pinch of salt, & chicken stock concentrate. Cover, reduce heat to low, & simmer (15-20 min.) until rice is tender.
Step 4
Fluff rice with fork; season generously with salt & pepper. Place chicken on top & sprinkle with crispy chorizo. Remove pan from heat & sprinkle with parsley and a few squeezes of lemon.
