Pork Satay with Peanut Sauce & Pickled Cucumber

Instructions

Step 1
Cube pork and season with spice mix
Step 2
Dice cucumber and half of red onion
Step 3
Make a pickle brine of white vinegar and sugar and soak cucumber and red onion. Put to the side.
Step 4
Dice peppers and remaining red onion into large chunks
Step 5
Alternate diced pork, red onion and pepper onto skewers
Step 6
Cook in oven for 20 minutes at 200°C
Step 7
While cooking skewers, cook rice as per instructions.
Step 8
Make sauce of peanut butter, maple syrup, tamari and a splash of warm water.
Step 9
Serve skewers on bed of rice, sprinkle drained picked veg and then drizzle with sauce.
