Step 1
Preheat oven to 350 degrees F. Dice sweet potato into 1/4-inch cubes (unpeeled). Heat half the olive oil in an oven-safe skillet over medium heat. Add sweet potato and sprinkle with salt and pepper. Cook, turning regularly, until browned, about 10 minutes.

Step 2
Meanwhile, dice onion. Combine eggs with milk or cream in a small bowl. Whisk well to combine. Season with salt and pepper.
Step 3
When potato has cooked 10 minutes, add onion to pan and cook 3 minutes more, until sweet potato has softened. Add in thyme and saute 30 seconds until fragrant.
Step 4
Pour egg mixture over sweet potato mixture and immediately crumble on goat cheese. Transfer to oven and bake 15 to 20 minutes, or until just set.
Step 5
Toss arugula with balsamic and remaining olive oil. Enjoy on top of frittata!
