Instructions

Step 1
Boil the pasta in salted water according to package instructions.

Drain in a colander, reserving about * cup of the pasta water,

and rinse under cold water to stop the cooking.

Squeeze out the meat from the boerewors into a bowl. Discard

the casing.
Step 6
Heat the oil in a large pan on high heat and cook the sausage

meat for about 5 minutes until brown.

Reduce to medium heat and add the onion, garlic and chilli.

Sauté for 2-3 minutes, until the onion becomes translucent.

Add the red pepper, mushrooms, thyme, oregano and Italian

herbs and fry on medium-high heat for 3-5 minutes.

Remove the pan from the heat and drain any excess oil using

a spoon, then return to the stove on medium heat.

Pour in the cream and allow the sauce to simmer for about

5 minutes or until slightly thickened.

Add the parmesan cheese and let it melt into the sauce, then

Stir in the cooked pasta and reserved pasta water and cook for
