600 gramsParty Wings

Cajun seasoning
1 tablespoonsvinegar
sesame
600mlwater
2 tablespoonsoy sauce
2 tablespoonsugar
splenda
2 tablespoonlight corn syrup
1 teaspoonchicken stock
1 teaspoongarlic powder
1 teaspoononion powder
½ cupwater
1 cupsoft flour
cake or pastry flour
½ cuppotatoe starch
corn starch will work
½ teaspoonsalt

Instructions
Step 1
On a large bowl mix sugar, chicken stock, oyster sauce, garlic powder, onion powder, cayenne pepper vinegar and water. Stir and place rinsed chicken pieces in bowl. Cover and marinade chicken for 4 to 24 hours
Step 2
In a small pan add soy sauce, sugar, light corn syrup, oyster sauce, chicken stock, onion powder, garlic powder and water. On high heat let mixture come to a rolling bubble. Remove from heat.
Step 3
After marinade is complete drain chicken well. In a large bag or bowl mix soft flour, starch and salt. Place chicken pieces in flour mixture and shake. If you fail to drain chicken well, you will ruin flour mixture.
Step 4
Place cooking oil in wok, deep frying pan or deep fryer. Heat oil on medium/ high heat. If unsure when oil is ready, tear a piece of chicken skin off and place in oil. Of it floats, its ready.
Step 5
Cook chicken approximately 10 minutes, itust be completely done. Of unsure, remove largest piece and cut meat away from the bone. There should be NO PINK. Once completely done remove chicken from oil and place in wire drainer or paper towels to drain.
Step 6
Raise heat of oil to High.... place chicken back into oil for 5 minutes. This will give the chicken a dark brown crispy coat.
Step 7
Remove chicken from oil and drain once more.
Step 8
Brush on sauce, to preserve the crispy texture. You may toss chicken in sauce, however it will not be as crispy.
