Ingredients

4 cupszucchini
shredded, unpeeled
ยฝ teaspoonsalt
2eggs
large
ยฝ cupgrated parmesan cheese
2 cupsshredded part-skim mozzarella cheese
divided
1 cupshredded low fat cheddar cheese
divided
1 poundground beef
ยฝ cupchopped onion
1 x 15 ouncesno sugar added Italian tomato sauce
can
1green pepper
medium, or sweet red, chopped
Instructions
Step 1
Preheat oven to 400ยฐ. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture.
Step 2
Combine zucchini with eggs, Parmesan and half of mozzarella and cheddar cheeses. Press into a greased 13x9-in. or 3-qt. baking dish. Bake 20 minutes.
Step 3
Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture. Sprinkle with remaining cheeses; add red pepper. Bake until heated through, about 20 minutes longer.
