Spicy Szechuan Cabbage Stir Fry | 炝炒白菜

Sliced garlic and dried chili pepper only need to be stir fried in hot oil for a few seconds before adding pre-cooked cabbage in the seasonings as they may get burnt out quickly.

Step 1
Slice garlic into small pieces, and break dried chili pepper into half. Tear cabbage leave off the steam and separate them into 3-4 inch cross pieces;
Step 2
Heat up some olive oil in a skillet over high heat, then adjust heat from high to medium as soon as oil becomes hot. Put cabbage pieces in the pan to cook until they become soft, take them out into a bowl. Pour the rest of olive oil in the pan to heat up, gently place sliced garlic and dried chili pepper and salt in the pan to stir fry for a few seconds before we put back pre-cooked cabbage in the pan, simply add light soy sauce and vinegar in the cabbage to stir fry for another 10 seconds or so. Garnish with sugar and chicken powder in the cabbage to mix evenly before removing them from the heat into a plate.
